Thirsty for success in the lucrative juice market in Canada? You're not alone!

The latest Statista research reveals that the juice segment is projected to generate a whopping US$3.96bn in revenue in 2023, with an annual growth rate of 2.32% (CAGR Compound Annual Growth Rate 2023–2027).

But don't get squeezed out by the competition. To stand out in this flourishing segment, you’ll need the perfect commercial-grade juicer.

That's why we've created this comprehensive buyer's guide: Whether you're starting a juice bar or adding healthy, fresh options to your restaurant menu, our expert guide has got you covered!

Key questions to ask yourself

When it comes to juicers, there’s no one-size-fits-all solution. To make sure you get a machine that suits your needs, it's important to ask yourself two key questions:

What types of fruits and vegetables will I be juicing?

Not all juicers are created equal.

Citrus juicers work best for oranges, limes, and grapefruit, while wheatgrass juicers are ideal for juicing herbs and wheatgrass.

By choosing the right type of juicer for your produce, you'll get the perfect consistency and flavour every time.

How much juice do you need to produce?

If you're whipping up small batches for personal use or for customers at a spa, a personal juicer is your best bet.

However, if you're looking to produce large quantities of juice, investing in a commercial-grade juicer will ensure you don’t’ spend all your time and energy on juicing alone.

Types of commercial juicers

Centrifugal juicer (fast juicer)

Centrifugal Juicer

These juicers use a basket spinning at high speed to separate the juice from the pulp.

While they juice quickly and reasonably efficiently, they tend to produce more noise and extract less juice than other juicer types.

Application

Busy settings such as juice bars, coffee shops, and dining establishments.

Used to make

Juices from fruits and vegetables, including carrots, apples, oranges, and celery.

Best for

Juicing quickly and reasonably efficiently, but not for leafy greens or wheatgrass.

Masticating juicer (Cold pressed/Slow juicer)

Masticating Juicer

These juicers extract juice by using a slow-moving auger to crush and press fruits and vegetables.

They are more efficient and produce less noise than centrifugal juicers.

However, they can be more expensive and take longer to extract juice.

Application

Establishments with varying levels of customer traffic that prioritize nutritious, premium-grade juices, such as health food stores, spas, and smoothie bars.

Used to make

Juice from fruits, vegetables, leafy greens, and wheatgrass. They’re also suitable for making nut butter and grinding coffee (with the aid of attachments).

Best for

Preserving the nutrients and enzymes in the juice (in contrast to centrifugal juicers).

Triturating juicers

Triturating juicers, also known as twin-gear juicers, use a slow-spinning auger and pressing mechanism to extract the juice.

This allows them to break down the cell walls of produce and release more nutrients.

Due to their low-speed and high pressure, they cause less oxidation and froth, resulting in juice that has a longer shelf life than juice from other types of juicers.

Application

Juice bars, cafes, and health food stores with high customer demand for top-notch, nutrient-rich juices. Additionally, they can be used in juice trucks where the juice is prepared beforehand and kept for future consumption.

Used to make

High-quality juice from fruits and vegetables as well as nut milk, baby food, and frozen-fruit sorbets.

Best for

Extracting nutrients from produce more efficiently for a more potent juice.

Citrus juicer

Citrus Juicer

These juicers are specifically designed for juicing citrus fruits like oranges, lemons and limes.

They are usually powered by an electric motor and have a cone-shaped reamer that extracts the juice, as well as a strainer that separates the pulp from the juice.

Although they are simple and easy to use, they are not suitable for juicing other types of fruits and vegetables.

Application

A range of establishments, from high-volume juice bars and restaurants to low-volume cafes and spas, that serve citrus juices.

Used to make

Juices from citrus fruits like oranges, lemons, limes, and grapefruits.

Best for

Juicing citrus fruits only.

Wheatgrass juicer

Wheatgrass Juicer

Juicers designed for wheatgrass and other herbs utilize a slow-moving auger to extract the juice, which helps preserve the nutrients and enzymes.

They are tailored for this specific purpose and are usually not be suitable for juicing other fruits and vegetables.

Application

Juice bars and health food stores.

Used to make

Juice from wheatgrass, herbs and leafy greens such as kale, spinach, bok choy, cilantro, rosemary, and sage.

Best for

Extracting juice from wheatgrass, herbs and other leafy greens efficiently.

Size of the feeder tube

The size of your juicer's feeder tube will greatly affect your juicing experience, particularly if you intend to juice leafy greens, fruits, and vegetables.

It’s important to purchase a wide feeder tube that can handle whole fruits or large portions of greens.

A smaller feeder tube will require you to cut the fruits or vegetables into smaller pieces before juicing, which can be time-consuming.

Budget

The cost of a commercial juicer machine in Canada varies from around $1000 to $9,000.

When planning your budget, remember to consider additional expenses, such as professional installation (if needed) and ongoing maintenance and servicing.

They extract every last drop of juice to create high-quality juice with more nutrients, perfect for juice aficionados.

Processing speed

A juicer that can extract juice quickly and efficiently is crucial to keep customers happy and coming back for more.

The two main kinds of commercial juicers are centrifugal and masticating.

Centrifugal juicers are like a snowmobile on the juicing course, with a high-speed processing range of 1000–3000 RPM, making them perfect for businesses that need to produce large quantities of juice in a short time.

Masticating juicers, on the other hand, run at a slower pace of 80–200 RPM, like maple syrup dripping from a tree.

They extract every last drop of juice to create high-quality juice with more nutrients, perfect for juice aficionados.

In summary, consider the volume of juice you require and thus how quickly you need to produce it.

Noise

When selecting a juicer, it's crucial to consider noise levels.

A noisy juicer can repel your customers and make your employees' working conditions unbearable.

Ideally, your juicer should have a noise level of less than 60 decibels (dB), which is comparable to the soft hum of regular conversation.

Thanks to technological advancements, numerous commercial juicers now incorporate quieter motors and sound-dampening materials.

Accessories

While most commercial juicers come with many attachments as standard, such as a juice container, tamper, and cleaning brush, there are other optional accessories you may want to consider getting, including:

Citrus attachment

If your juicer isn't designed specifically for citrus fruits, a citrus attachment can be a valuable add-on.

This accessory will enable you to juice oranges, lemons, limes, and grapefruits efficiently, expanding your menu.

Replacement filters

Depending on your juicer's design, you may need to replace filters periodically to maintain optimal performance.

Stock up on them to avoid unnecessary downtime.

Maintenance kit

Invest in a maintenance kit that includes spare parts such as blades, gaskets, and replacement screws.

This kit will enable you to perform regular maintenance and address any issues that may arise, minimizing downtime.

Anti-slip mat

An anti-slip mat placed under your commercial juicer will prevent it from moving during operation, ensuring stability and safety.

Protective gloves

These gloves protect you and your staff from possible injury when handling sharp components such as blades and cutting discs.

Energy

Energy efficiency is a crucial factor to consider when selecting a juicer, not only for cost savings but also for the environment.

Look for juicers with an Energy Star rating, which signifies that they meet the energy efficiency guidelines established by the Canadian government.

Some commercial juicers have an automatic shut-off feature, which can help save energy when the machine is not in use.

Safety Features

Juicing without proper safety features is like playing hockey without a helmet — risky and dangerous.

Look for these safety features to ensure your juicing game stays on track:

Auto shut-off

When the juicer becomes overloaded or jammed, this feature will turn off the motor automatically, preventing any potential safety hazards.

Materials

To prevent food contamination, the juicer must feature high-quality materials that are easy to clean and sanitize.

Non-slip feet

These keep the juicer stable and prevent it from moving or sliding while in use.

Overheat protection

When the juicer becomes too hot, this function automatically shuts it off.

Safety locking arm

This component ensures that the juicer will not operate unless the lid is securely in place.

Safety switch

When the lid is open or removed, this feature automatically shuts off the juicer.

Ease of use

When evaluating the usability of a commercial juicer, there are several important aspects to consider:

Large feeding chute

This feature enables you to feed whole fruits and vegetables into the juicer without the need to chop or cut them into smaller pieces beforehand, saving you both time and effort.

Intuitive controls

Straightforward and user-friendly controls, such as push-button operation or a touchscreen display, can help reduce errors and improve operating efficiency.

Variable speed settings

Adjustable juicing speeds that can be tailored to the specific type of fruit or vegetable being juiced enhance the versatility and precision of the juicer.

Pulp-ejection system

This system automatically separates the pulp from the juice, minimizing the need for manual straining and making the process quicker and cleaner.

Ease of cleaning

When evaluating how easy it would be to clean a juicer, it’s important to consider:

Dishwasher-safe parts

Juicers with dishwasher-safe components significantly reduce the time and effort required for cleaning.

Removable components

A juicer that is designed for easy disassembly, with removable parts that can be washed separately, simplifies the cleaning process.

Anti-drip spout:

These spouts prevent spillage when the juice is poured out of the juice collector.

Smooth and rounded design

A juicer with a smooth surface, free from corners and crevices, is simpler to clean as there are no areas where pulp or juice can accumulate.

Used commercial juicer — a worthwhile option?

Spending thousands of dollars on a new professional juicer can put a strain on your budget and cash flow.

If you’d prefer not to invest a lot of money in a commercial juicer, a cheaper, pre-owned appliance might be the solution you’re looking for.

SilverChef’s range of ‘Certified Used’ commercial equipment is mostly ex-rental equipment sourced from businesses we know and trust.

The equipment is typically less than two-and-a-half years old, has been fully refurbished by us, and is backed by a three-month parts-and-labour warranty.

You can either buy or finance the Certified Used (and clearance) equipment on our website.

We’re one of the few financiers, if not the only one, in Canada that funds second-hand commercial kitchen equipment.

Warranty and insurance

Most commercial juicer manufacturers provide warranties ranging from one to three years, depending on the type of juicer.

If the equipment develops a covered fault within that time, the manufacturer is obliged to repair or replace the equipment or give you a full refund.

Carefully study the warranty to understand exactly what is and isn't covered.

SilverChef offers a three-month parts-and-labour warranty on all our ‘Certified Used’ and clearance equipment.

Business insurance covers loss or damage to your commercial kitchen equipment and other property.

This coverage typically includes fire, accident, and theft.

Some insurers also offer equipment-breakdown cover.

Contact your insurer to confirm whether the equipment you’re getting is automatically covered by your policy or will need to be added to it.

If your insurer doesn’t provide flood cover as standard, you may wish to consider requesting it.

How to maintain your commercial juicer

To keep your commercial juicer running efficiently and prolong its lifespan, it’s important to maintain it properly.

Below are some useful tips for ensuring your juicer remains in excellent condition:

Daily cleaning

To prevent the accumulation of pulp and other food debris, it’s important to clean the juicer thoroughly after every use.

This involves disassembling the various components of the juicer, such as the blade, chute, and collection bin, and cleaning them meticulously.

Weekly cleaning

It’s recommended you soak the removable parts of the juicer in warm, soapy water once a week to eliminate any accumulated build-up.

Filters

By regularly cleaning or replacing the filters, you can guarantee that your commercial juicer will operating at its best and produce high-quality juice.

Keep the juicer dry

This protects the commercial juicer from rust and corrosion, which can significantly reduce its lifespan.

Lubrication

To reduce friction and minimize wear and tear on the moving parts of your commercial juicer, apply a food-grade lubricant.

Blade sharpening

Commercial juicer blades become blunt with use, so it’s advisable to inspect them regularly and, when necessary, sharpen them to maintain optimal performance.

Follow manufacturer's instructions

To ensure your juicer is being used and maintained correctly, it’s important to read the manufacturer's manual and follow the instructions carefully.

How often should a commercial juicer be serviced?

The servicing requirements of a commercial juicer vary, depending on the make and model, and how often it’s used.

In general, it’s recommended you service the juicer at least once a year.

Follow the manufacturer's recommendations, which may include regular inspections, replacement of damaged or worn-out parts, and any necessary repairs.

Commercial juicers FAQs

How much does a commercial juicer cost?

The cost of a commercial juicer in Canada varies widely, depending on the make and model.

A basic commercial juicer starts at around $1,000, while high-end models can cost upwards of $9,000.

How loud are commercial juicers?

The noise levels of commercial juicers vary, depending on the make and model.

Centrifugal juicers tend to be louder than masticating juicers, but even among centrifugal juicers the noise levels can differ.

Some commercial juicers are designed with noise-reduction features, such as insulated motor housings or quieter motor technology.

The product specifications should tell you how many decibels the machine generates; you can then compare it with others.

Can I use frozen fruits and vegetables in a commercial juicer?

While some commercial juicers may be able to process small pieces frozen fruits and vegetables, in generally it’s recommended you use fresh, ripe produce to ensure the highest quality juice and prolong the life of the machine (the blades and other components of which can be damaged by frozen products).

Can I make nut milk with a commercial juicer?

Yes — some commercial juicers can produce nut milk.

Masticating or slow juicers are usually better at making nut milk as they’re able to handle tougher ingredients and extract more juice from them.

Some juicers come with specialized nut-milk bags or strainers to make the process easier and more efficient.

What’s the difference between a juicer and a blender?

A juicer is a kitchen appliance that extracts the juice from fruits and vegetables using a crushing, grinding, or squeezing action, resulting in a smooth and thin liquid without any fibre.

In contrast, blenders do not separate the juice and fibre, and instead blend them together to create a mixture with a thicker consistency.

What voltage and plug type should I look for in a commercial juicer?

When looking for a commercial juicer, make sure it’s compatible with the 120V standard voltage in Canada and has a Type B plug.

Some commercial juicers may have dual-voltage capabilities, allowing them to be used in other countries with different voltage standards.

Commercial juicer terminology

Auger

A spiral-shaped, elongated component that extracts the juice of fruits and vegetables by crushing or grinding them against a juicing screen or filter.

Bioceramic magnetic gears

These gears (found in twin-gear juicers) are designed to enhance the nutritional content of the juice by modifying its molecular structure.

They contain magnets that aid in breaking down the nutrients in fruits and vegetables, enabling the body to absorb them more easily.

Blade

Sharp, rotating blades cut, slice and dice fruits and vegetables as part of the juice-extraction process.

Centrifugal juicer

A type of commercial juicer that uses a fast-spinning blade to shred fruits and vegetables before extracting the juice through a filter.

Citrus press

A type of commercial juicer specifically designed for extracting juice from citrus fruits such as oranges, lemons, and limes.

It works by pressing down on the halved fruit and extracting the juice through a filter or strainer.

Cold-press juicer

A juicer that employs a pressing action to extract juice without generating heat, resulting in juice with a higher nutrient content.

This label can be used for any low-speed, masticating juicer, since they all extract juice using pressure, which eliminates heat from the process.

Control panel

The part of the juicer that allows the user to adjust settings, such as speed and power.

Feed chute

The opening where ingredients are fed into the juicer during the juicing process.

Typically located at the highest point of the juicer, the feed chute enables ingredients to either fall or be pushed into the machine for juicing.

Juicer pusher

This accessory, also known as a juicer tamper or plunger, is used to push ingredients down into the juicer's feed chute or feed tube during the juicing process.

Juice bowl/ drum

Extracted juice is collected in the juice bowl. It typically includes two outlets — one for the juice and the other for the pulp (which is separated during the juicing process).

Juicing screen

Also known as the juicing screen or strainer, this is the component of the juicer that separates the juice from the pulp.

It is usually in the form of a conical or cylindrical stainless-steel sheet with small perforations or, in the case of some centrifugal juicers, a stainless-steel mesh.

Masticating juicer

A masticating juicer is specifically designed to thoroughly chew and grind plant fibres, extracting the maximum flavour and nutrients from them.

Compared to a centrifugal juicer, it is more efficient and produces a juice that is more flavourful and nutritious, albeit more slowly.

Pulp bucket

The component of the juicer that collects the discarded pulp after juicing.

Twin-gear juicer

In a twin-gear juicer, two stainless-steel cylindrical gears interlock and crush ingredients as they pass between the gears.
